Detection of the climacteric stage in fruits and vegetables.

Results of a study using the non-destructive Peleg Firmness Tester (PFT) for detecting the climacteric stage in tomatoes and kiwifruits are described. The climacteric stage could be detected by a characteristic dip in PFT evolution curves; in tomatoes the dip coincided with the transition of mature-green fruits from green to pink, which is when the climacteric usually occurs. It is suggested that the PFT may be used for determining the optimal harvesting time for kiwifruits, for predicting the softening rate of kiwifruits in long-term storage and for sorting kiwifruits by firmness.
