Effect of fruit maturity on the success of controlled atmosphere storage of 'Fantasia' nectarines.

Fantasia nectarines harvested at 2 maturity stages based on background skin colour (cream/yellow for the local market and green/cream for export) were stored in controlled atmosphere (CA) storage. Ethylene production at harvest showed that fruits at both maturity stages had reached the climacteric stage, but that local market fruits were further advanced. The fruits were stored at 0 deg C in air or CA conditions for up to 6 weeks. After 4 weeks, fruits of both maturities stored in air lacked flavour, were softer and developed a mealy texture during shelf life compared to fruits stored in 2% O2 plus either 5 or 10% CO2, or in air plus 10, 15 or 20% CO2. The CA-stored fruits were juicy, and developed a good flavour. Ethylene production of air-stored fruits during a shelf life period suggest that the fruits were ripening abnormally. CA-stored fruits retained the capability to produce ethylene after storage, although the more mature local market fruits were showing signs of senescence after 4 and 6

weeks' storage. Endo- and exopolygalacturonase activity decreased in fruits during storage in air. The results suggest that for optimum storage life, nectarines should be placed in CA storage near the onset of the ethylene climacteric.
