Electrical impedance methods for assessing fruit quality: avoidance of electrode artifacts.

Methods of minimizing or compensating for the influence of interfacial impedances between electrodes and plant tissue which occur when assessing fruit or vegetable quality by electrical impedance methods are described. Compensated 3-electrode techniques suitable for use with currently available impedance analysers are presented. The techniques are illustrated by examples of their effectiveness at suppressing impedance artifacts with a novel tissue-probe and non-invasive measurement. The superior speed and resolution of these methods are expected to be suitable for the useful development of non-invasive measurements of quality.
