Correlations between external and internal quality parameters were investigated in apple fruits (cultivars Golden Delicious and Jonagold) with the aim of developing algorithms out of colour images characterizing external visual quality features such as shape, size and colour and reducing the number of parameters needed to describe external and internal fruit quality. For Golden Delicious fruits, there were gradients in the cation content and for Jonagold fruits there was a gradient of the fructose content related to skin coloration. For Golden Delicious, the most important correlation was the relationship between dry matter content and green colour. For Jonagold, the most important correlation was between the size parameters and the glucose and fructose contents in the coloured side of the fruit. More than 16 and more than 10 principal components, for Jonagold and Golden Delicious fruits, respectively, were needed to explain more than 95% of the total variance of all the measured variables.
