The use of acetic acid fumigation to control postharvest fungal pathogens of fruit and vegetable crops is briefly reviewed under the following headings: physical and biological properties of acetic acid; antimicrobial properties; fumigation of fruit with acetic acid; fumigation of seed with acetic acid; acetic acid fumigation of processed food; acetic acid fumigation combined with MAP (modified-atmosphere packaging); and conclusions. It is concluded that acetic acid fumigation is a viable alternative to sodium hypochlorite dips for sterilizing fruit surfaces.
