The control of superficial scald of pome fruits is reviewed. Superficial scald can be effectively controlled by the antioxidants diphenylamine (DPA) and ethoxyquin. However, there are doubts about the safety of these chemicals as food additives. This has increased the interest in alternative methods of scald control. In recent years, research has focused on non-chemical control by controlled atmosphere storage, postharvest heat treatment and superficial scald prediction.
