The sequence of harvest and postharvest operations for table grapes (Vitis vinifera) is given, including handling, phytosanitary treatments, packing, transport, pre-cooling and refrigerated storage. Technical principles are also given for reducing losses and maintaining quality of fruit. Storage disorders, including whitening, freezing and internal browning of grapes, are outlined briefly.
