บทคัดย่อ

Variables for estimating the best time for drying garlic (Allium sativum L.) bulbs.

This paper discusses the curing and drying of garlic bulbs. These are ambiguous terms which need standardized parameters in order to define the "optimal point" for the end of the process. Weight loss, organoleptic characters and contents of soluble solids, essential oils or pyruvate, are common variables used to evaluate the ongoing process. However, genotype, application rate and time of fertilizers, irrigation, use of growth regulators, as well as time and method of harvesting are management which can modify postharvest responses in stored bulbs. It is necessary to take into account all these factors to obtain a long storage duration of a marketable quality.
