Canarium schweinfurthii is a multipurpose tree from the secondary savanna of Cameroon. It is one of the exceptional trees whose fruits mature during the dry season, the ploughing period. When it is harvested, the fruit takes about 4 to 6 days to become very hard and thus become uncookable. Because of this, the post harvest loss is very high. The oil content of the fruit pulp varies between 36 and 58% (DW) depending on the agro-ecological origin. The study described here demonstrates that the fruits, even when damaged, can be used in small-scale oil production (for edible or cosmetic use), employing either water assisted oil extraction (a low-cost method suitable for household oil production but giving low yields) or oil extraction using a small expeller (a more expensive high yielding method suitable for a large cooperative or entrepreneur). The technological interest of C. schweinfurthii pulp is emphasised and the attention of farmers is drawn on its importance for small-scale oil production.
