Equation-based models of important mechanisms for water transport and product mass loss during storage of horticultural produce with or without packaging are presented. Transport pathways for which improvements to previous sub-models in the literature were deemed necessary included packaging material moisture uptake and water vapour transport across packaging materials. The new sub-models require only those product, fluid, package and packaging material property data that are likely to be available to industrial practitioners. Implementation of the full steady-state mechanistic model was carried out using a Rapid Application Design database-linked programme. Testing against experimental data for apples and tomatoes in different package and storage conditions demonstrated sufficient accuracy for many applications.
