Three one-tonne pallet boxes of potatoes cv. Carlingford and Maris Peer were held in store in ambient, low oxygen or low oxygen/high carbon dioxide regimes at 3.5 deg C and 98% relative humidity for 10 weeks. The potatoes had light coloured un-set skins at loading and remained marketable after storage regardless of regime. Decreasing oxygen concentration and increasing carbon dioxide concentration progressively reduced glucose and fructose accumulation but promoted sucrose, particularly in Carlingford under the low oxygen/high carbon dioxide regime. However taste assessments of sweetness did not reflect levels of sugar accumulation.
