Characterization of Galia type melon during maturation.

Galia melon (Cucumis melo var. reticulatus hybrid Nun 1380) fruits were harvested at 5 different maturity stages for analysis of fruit quality and composition. Fruit firmness decreased during maturation, but no statistically significant differences were observed in total and soluble pectin contents. Fruits harvested at maturity stage I showed the lowest values for pH, soluble solids content (SSC), total sugars and vitamin C[ascorbic acid], and the highest values for titratable acidity and total chlorophyll. Fruit reducing sugar content decreased during maturation, ranging from 1.67 (maturity stage V) to 2.92% (maturity stage I), which corresponded with an accumulation of sucrose. Maturity stage II was considered the optimum time for harvesting Galia melons. At this stage the fruit SSC was greater than 9% (a minimum standard for the import market) and firmness was high enough (>50 N) to provide resistance to postharvest handling.
