Pear cv. Nanguoli [Pyrus ussuriensis] fruits were picked from 30-year-old trees (Liaoning, China), packed in PE film bags (film thickness 0.04 mm), pretreated at 20 deg or 10 deg C for different durations, then stored at 0 deg . Flesh firmness, soluble solids content, sugar, acidity, protein, starch enzyme activity were analysed. For all treatments, flesh firmness decreased during storage; the higher the pretreatment temperature, the faster the firmness decreased. Soluble solids content increased initially before decreasing.
