Influence of harvest date and postharvest treatments on fruit quality during storage and simulated marketing in 'Fuji' apples.

Fruits of apple cv. Fuji were harvested late or stacked in the field for several days in an attempt to improve skin colour development, which is often poor in fruits picked early in the season. The anthocyanin content of fruits picked 10 days after the commercial harvest date was twice that of fruits picked 10 days before the commercial harvest date, but the incidence of water core was high in late-harvested fruits. Although firmness and acidity were reduced by delaying harvest, soluble solids content increased in fruits harvested later in the season. Delaying the harvest of Fuji apples by up to 10 days from the commercial harvest date enhanced skin colour and soluble solids contents of fruits. However, field stacking of harvested fruits did not have a beneficial effect on colour development, and fruit quality decreased through reduction of firmness, soluble solids content and acidity. Polyethylene film wrapping was effective in reducing water loss from fruits. However, film wrapping of Fuji fru
its affected by water core caused parts to develop core browning. Wax application was effective in preventing water loss and in retaining the glossy surface of fruits, especially during simulated marketing.
