Relationship between banana 'Prata' bunch development at harvest and postharvest fruit quality.

Banana cv. Prata bunches were harvested 90, 105, 120, 130 and 150 days after anthesis in a trial in Lavras, Brazil. Fruits from the second and third row of each bunch were stored under ambient indoor conditions (22 deg C and 85-95% RH) then analysed at 3 maturation stages (according to peel colour) for size, weight, pulp/peel ratio, pulp texture, pH, titratable acidity, starch and total soluble sugar contents. The results showed that fruits harvested 105 days after anthesis were of similar quality to those harvested later. But, for the former, storage life was 2-3 times longer (29 days until full maturation was reached) than for the latter.
