Polyamines evolution during post-harvest on 'Fortune' mandarins at two different ripening stages.

The evolution of free polyamines was studied in the peel (flavedo and albedo) of the mandarin cultivar Fortune at stage 1 (unripe) and stage 2 (ripe) of maturation, after harvesting and storage at 20 deg C for 72 h. In fruits at stage 1, putrescine levels decreased from 496.22 to 84.91 nmol/g FW during the first 24 h after storage then there was a slight increase. In fruits at stage 2, putrescine increased from 416.67 to 647.29 nmol/g FW within 24 h, then decreased until the end of the experiment. Spermine levels in stage 1 fruits were higher than those in stage 2 fruits and decreased during storage, while those in stage 2 fruits increased. Spermidine levels remained unchanged for both ripeness stages and during storage.
