Fruit respiration was determined using the pouch method and 2 kinds of film (LDPE and PVC). Respiration rate decreased with the sharp decrease in oxygen and sharp increase in CO2. It was suggested that respiration rate was affected largely by the changing oxygen concentration. The respiratory quotient increased as the oxygen concentration rapidly decreased. Under low temperature conditions (5 deg C), the respiratory quotient of cucumber fruits, which are susceptible to chilling injury, increased to about 2 with the increase in CO2 evolution and the slight increase in oxygen consumption rate.
