Experiments with cherries showed that rapid cooling after harvest and maintaining the cool temperature improved the keeping quality of fruits. A prototype transportable cooler was used which cooled fruits by 10 deg C within 4 h. This short cooling period was made possible by using an air speed of 2.6 m/s and good ventilation. Cooling fruits reduced decay.
