The market for fruits and vegetables is changing for many reasons, among them the demand for 'healthy' products by the consumers and an increase in international trade in these products. The problems caused by these changes, and the strategies which must be adopted to meet the needs of the market are discussed with particular reference to fruits at all stages of production from pre-harvest to commercialization.
