บทคัดย่อ
This review focuses on the concept of ohmic processing, and its application in the food industry, particularly for the aseptic processing of foods including milk and milk products. Factors that affect ohmic processing, and the present status of the process are discussed. It is suggested that future work should be directed at elucidation of the mechanism of microbial death in ohmic processing, optimization of the protocol of aseptic processing for different particulate foods, and development of methods that can be used to meet a growing demand for aseptic food products.
