Export data (1994-98) for Spanish tomatoes are presented, followed by an overview of factors influencing postharvest quality. Different aspects of postharvesting are described, including harvesting conditions, early removal of damaged tomatoes, quality control and classification, packaging, use of pallets, accelerated ripening, cold storage, transport, and logistics for distribution. Different methods (including pesticide use) to reduce postharvest losses are briefly outlined.
