Strawberries (cv. Campineiro) were treated with CaCl2 (0, 2 or 4%) by preharvest sprays or postharvest immersion. Fruits were harvested at 3/4 red maturation. Polygalacturonase (PG) and pectin methylesterase (PME) activities, total calcium and vitamin C contents were evaluated. Cell wall material was analysed for bound calcium. The strawberries treated by preharvest sprays showed greater percentages of vitamin C than those treated postharvest. The 4% CaCl2 treatment increased total calcium. Ca treatments reduced the PG activity, while the 2% treatment increased PME activity. Postharvest treatment increased the percentage of bound calcium in the cell wall.
