Post harvest physiology of fruit and vegetable crops.

This review discusses physiological maturity, physiological changes during harvest, respiration and its significance in postharvest biology, postharvest changes in flavour, sugar and organic acid metabolism, phenolic compounds, volatile compounds, colour (chlorophyll, anthocyanins and carotenoids), texture and cell walls, and the role of ethylene in ripening.
