To evaluate the effect of ethephon and GA3 on chlorophyll degradation, peroxidase activity and respiration during the postharvest senescence of broccoli cv. Piracicaba, harvested inflorescences were immersed for 1 h in 0.1, 1.0, 10, 100 or 1000 mg ethephon/litre then stored at 25 plus or minus 5 deg C or sprayed with 50, 250 or 1000 mg GA3/litre and stored at 20 plus or minus 2 deg . Treatment with 100 or 1000 mg ethephon/litre enhanced the rate of chlorophyll degradation, evident 48 h after harvesting, while the control retained 80% of its initial chlorophyll content. Treatment with 1000 mg ethephon/litre significantly increased peroxidase activity and respiration 24 h after harvesting. GA3 did not affect the degradation of chlorophyll and respiration. However, it reduced peroxidase activity by 25, 38 and 43% at 50, 250 and 1000 mg/litre, respectively, compared with the control, 48 h after harvesting.
