Micronutrients from fruits and vegetables are important for human health and welfare. Strategies to increase the intake of micronutrients include: increasing the consumption of fresh fruits and vegetables by human populations; improving micronutrient bioavailability; nutrient fortification; and enhancing nutrient retention during postharvest handling (storage, processing, handling).
