Effect of postharvest CO2 application time on the flesh firmness and quality in 'Nyoho' strawberries.

The effect of postharvest CO2 application (20, 60 or 100% for up to 4 h) on fruit firmness and quality was investigated in strawberries cv. Nyoho. Although the continuous application of 20% CO2 appeared to be most effective at increasing firmness, short-term application of 100% CO2 for <3 h was also effective at increasing firmness without altering quality. Treatment with CO2 at 100% did not affect soluble solids content, but did slightly increase the sucrose content and juice acidity. The major organic acid was citric acid (<90%); malic acid was found in relatively low concentrations. Sensory quality was not altered by treatment with 100% CO2 for up to 3 h, but treatment for 4 h led to the development of off-flavours. It was concluded that 2 h with 100% CO2 was the best treatment for promoting fruit quality.
