Malpighia emarginata fruits ripen rapidly after harvest causing them to be highly perishable. The commercial use of fresh fruits is consequently limited and fruits must be frozen or processed rapidly. Vitamin C [ascorbic acid] content is higher before maturation is complete and fruits harvested for use in the manufacture of powdered products such as pharmaceuticals or concentrates for food enrichment, where vitamin C content is the most important factor, should be harvested immature. Fruits harvested for freezing or processing into pulp or juice should be red in colour but sufficiently firm to withstand handling. Fruits must be harvested by hand (daily or on alternate days) because buds, flowers and immature and ripe fruits are found simultaneously on the same plant. Refrigeration is essential for long distance transport but temperatures below 5 deg C produce chilling injury. Fruits harvested at the beginning of red colour development should be stored at 7-8 deg C and at least 90% RH. Detailed r
