Strawberry fruits (cv. IAC Campinas) were coated with 1, 2, 3, 4 or 5% starch film and stored at ambient temperature (21 deg C, 64.5% RH). Control fruits were not coated. Weight loss, sensory evaluation and visual quality (colour and texture) were assessed after 0, 2, 4, 6, 8 or 10 days. After 10 days' storage, weight loss was least in fruits coated with 1, 2 or 3% starch film; these fruits had the best texture and a longer shelf life. Sensory characteristics were similar in fruits from all treatments.
