Influence of mechanical stress on the active oxygen metabolism system of apple during transportation.

When subjected to mechanical stress (during transportation by truck) for 14 h, Fuji apple fruits appeared brown (20%) on the surface. The activities of SOD [superoxide dismutase], CAT [catalase] and POD [peroxidase], MDA [malondialdehyde] content and electrolyte leakage were investigated. SOD, CAT and POD activities increased after mechanical stress, and decreased during storage whereas in control fruits these were maintained at almost the same levels over the 6 days. LOX [lipoxygenase] activity reached its peak in the first day after mechanical stress, and the content of MDA, and electrolyte leakage increased greatly at the same time. The data suggest that mechanical stress during transportation affected the balance of the free radical metabolism in the apples and membrane integrity, and promoted breakdown and senescence during storage. The significance of packing apples during transportation was demonstrated.
