Respiration rate, weight loss and quality (appearance, aroma and colour) were assessed in fresh coriander (80 g packs) stored at 4, 10 or 25 deg C for 2, 4, 6 or 8 days. Quality parameters decreased as storage temperature increased. Storage at 4 deg C is recommended for preserving quality for one week, although weight loss after 8 days at 4 deg C was approx. 50%.
