Modified atmosphere packaging (MAP) of cherries from the Golan and Harai Jerusalem areas was tested for 3 seasons. The late ripening cv. Bing was stored successfully for 2 months with 2 days' shelf life at 20 deg C. During the third month of storage fruit quality decreased because of developing decay. Chinook cherries were stored for 2 weeks in MAP with minor weight loss and decay and retention of green stems and attractive appearance. Fruit cracking of Chinook was not affected by MAP storage. Semi-commercial trials were conducted on Bing and Van cherries in 1-kg MAP boxes for 5 and 6 weeks. The fruits in bags which were sealed properly were of high quality after storage, but there was a sealing problem with half the bags. Plastic films used in the trials were microperforated Xtend films and polyethylene bags. From this study it appears that cherries can benefit from a wide range of CO2 concentrations, between 5% and 10% during storage, and that low O2 is not as important for maintaining fruit q
uality.
