Influence of mechanical stresses on the respiration activity of carrots.

Due to unsuitable handling during harvesting, postharvest handling and marketing, carrots can be exposed to mechanical stress (mechanical load). Such stress often reduces internal and external quality. The degree of damage can be measured by determining changes in respiration rate, since undamaged (externally) carrots react to mechanical loads by increasing their respiration rates. Differences in respiration rates were established depending on the intensity and the kind of load. Measurements in packinghouse lines demonstrated that respiration intensity increased with each step of processing.
