Factors influencing apple fruit firmness.

Preharvest (cultivar, Ca and N nutrition, chemical treatments, cultural practices) and postharvest (maturity at harvest, heat treatments, Ca treatments, storage temperature, controlled atmosphere storage) factors that influence apple fruit firmness are discussed.
