Kiwifruit ripening was retarded in a modified atmosphere, and the fruits produced less ethylene and maintained a lower internal ethylene concentration than fruits stored in normal air. This was due to inhibition of ACC synthesis. ACC content was the rate-limiting step in ethylene biosynthesis. There were some oscillations in internal ethylene concentration, ACC content and ACC oxidase activity in fruits kept in the modified atmosphere.
