Data are presented on changes in mechanical properties of fruits of 12 apple cultivars during storage at 2-4 deg C. The mechanical properties were determined using a compression test of a cylindrical specimen of flesh, a skin tension test, a puncture test of the flesh and a bending test of a flesh block.
