Cell wall analysis of different apple cultivars.

Cell walls of fruits of the apple cultivars Jonica, Jonagored, Kovelit, Idared, Mutsu and Lysgolden harvested in September were analysed by scanning electron microscopy (SEM) in October and chemical analysis of the cell walls was carried out in October and after storage at 4-6 deg C and 90% RH until February. beta -Galactosidase (EC 3.2.1.2.3.) activity increased between October and February in cultivars Jonica, Jonagored, Mutsu and Lysgolden but was unchanged in cultivars Kovelit and Idared. Polygalacturonase (EC 3.2.1.6.7.) (PG) activity was higher in Jonagored and Mutsu fruits than in fruits of the other cultivars in October, but in February PG activity was highest in Idared and Lysgolden fruits. No PG activity was recorded in Jonica and Jonagored fruits in February. Total pectin content decreased during storage in all cultivars. Neutral sugar contents of cell walls were highest in Mutsu fruits in October and in Kovelit and Idared fruits in February. SEM micrographs showed heterogeneous tissu
