บทคัดย่อ
When D. klaineana fruits were ripened at 26 deg C, a rapid softening in the texture and increases in pH, and contents of sugars, soluble solids and ascorbic acid occurred within 4 days. Total acidity and starch content decreased but there was no significant change in total solids.
