White leaves produced by these palms have been used in religious commemorations at Easter in the church at Elche for several centuries. Men climb the trees each year between January and May and remove the older leaves and inflorescences. The remaining leaves are tied up in a cone and old leaves packed around the cone for added protection. Leaves 1 metre from the top of the cone are untied to allow partial photosynthesis. During the summer a black plastic cowl is placed on top of the cone to completely exclude light. White leaves are harvested from inside the cone between January and Easter (March-April) and then the cone is severed from the tree. Postharvest handling, preservation and utilization are described. More than 90% of the crop is now sold outside the municipality and about 80 000 leaves are exported, mainly to the UK.
