Prevention of the incidence of skin blackening by postharvest curing procedures and related anatomical changes in 'Niitaka' pears.

 

Fruits of pear cv. Niitaka were harvested at commercial harvest and stored at 0.5 deg C after curing by keeping fruits at ambient temperatures (18-22 deg C) for 5, 10 or 15 days followed by step-wise cooling until equilibrium at 0.5 deg C. Skin blackening was observed only in fruits stored without a curing treatment. Curing treatments did not significantly alter fruit quality during storage. Anatomical studies revealed that curing and refrigerated storage affected the physical properties of the fruit epidermis. However, the symptoms of skin blackening were not caused by discoloration of the epidermal or hypodermal cells, but by collapse and crumpling of cells of the cortex. It is suggested that curing reduced the incidence of skin blackening by thickening the epidermal layer.
