Softening of durian cultivars.

 

The activities of the enzymes polygalactosidase, pectinesterase, beta -galactosidase and cellulase were assayed during postharvest aril softening of durian cultivars Chanee and Monthong. Fruits were harvested from a commercial orchard in eastern Thailand and held at ambient conditions during ripening. The arils of both cultivars softened continuously throughout the ripening period, coinciding with a marked increase in water-soluble pectin contents, polygalacturonase and pectinesterase activities, while beta -galactosidase and cellulase activities were relatively high at picking time and slightly increased during ripening. The aril of cv. Monthong was firmer and contained less water-soluble pectin and pectinesterase activity than that of cv. Chanee, while their polygalacturonase activities were comparable during ripening.
