A summary is presented of discussions held at the workshop covering some of the highlights and gaps in research on postharvest heat treatments and future requirements. The discussions cover plant responses to heat and development of heat treatments; heat treatments and disease development; heat treatments for insect control; and heat technology and economics. It is concluded that adoption of heat treatments for disease and insect control by the industry has been slow, partly due to the potential for product damage (particularly on a commercial scale) from heat treatments, but that the continuing loss of postharvest chemicals for decay and insect control will increase commercial interest in these treatments.
