Changes in cell wall metabolism of kiwifruits during low temperature storage by postharvest calcium application.

The effect of postharvest CaCl2 (2, 4 and 6%) infiltration at low pressure on physiological changes in kiwifruit (Actinidia chinensis [A. deliciosa]) stored at low temperature was investigated during harvest and after 2 and 4 months of storage. Untreated fruits served as controls. Calcium treatment inhibited the decrease in flesh firmness. Calcium content was higher in the calcium treated fruits than in the controls. An increase in calcium concentration resulted in its accumulation in fruit flesh and peel. Water soluble pectin increased, while insoluble and total pectin decreased during storage. However, the changes in these components were inhibited by calcium treatment. Polygalacturonase and pectin methylesterase (pectinesterase) activity were inhibited by calcium treatment. BETA -galactosidae activity was not consistent in all the treatments.
