Postharvest comparative study of two cultivars of sapodilla (Manilkara zapote L.) fruits.

Fruits of sapodilla cultivars Prolific and Martin growing in Venezuela were picked at subjective physiological maturity (colour and sensory firmness). Some physical, chemical and physiological analyses were performed postharvest at 25 +/-3 deg C and 60-70% relative humidity. Total carotenoids were measured by the McCollum method using hexane as a solvent. Tannin contents were obtained by the Singleton and Rossi method and anthocyanins by the Fuleki and Francis method. Soluble solids were determined using an Atago refractometer and firmness with an ELE cone penetrometer. Respiratory activity was monitored by trapping carbon dioxide in 10% NaOH solution. As expected during ripening, total chlorophyll and tannins decreased and total carotenoids, soluble solids and fresh weight were lost and softening increased, although the postharvest patterns were different in each cultivar. Both cultivars showed a climacteric respiratory behaviour but suggesting differences in their postharvest behaviour related
to shelf life.
