Quality is a complex factor covering not just commercial aspects, but above all biological and physiological ones. It is essential to have a good knowledge of these for optimum quality management. Improvements in the techniques for measuring and maintaining quality in the postharvest chain require combined contributions from many disciplines (such as physiology, chemistry, engineering, mechanics, psychometry, and statistics). This paper provides an overview of the main factors and any defects which influence the appearance, texture and flavour of pears (colour, firmness, juiciness, sweetness, acidity, aroma) and the relative measuring methods. The influence of some postharvest techniques on the quality of the fruits is also examined.
