Chinese vegetable production, and the increasing importance of postharvest and storage technologies, are briefly addressed. Chemicals, such as SO2, Sporgon, phytohormones (2,4-D and GA3), and non-toxic, effective and low-cost natural fresh-keeping agents (e.g. chitin), are presently used in postharvest treatments. Some fresh-keeping agents with flavouring and health care purposes have been derived from extracts of medicinal herbs. Modern storage methods are developing rapidly in China due to accelerated growth of production and market demand, but traditional storage methods will still take the dominant part due to their low cost. Postharvest storage of vegetables should be practised in accordance with their storage characteristics and their market value.
