The symptoms of superficial scald and low temperature breakdown in apples are described. Factors predisposing fruit to the diseases include cultivar. Cv. Golden Delicious is fairly resistant to superficial scald, which may be the result of excessive heat, drought or luminosity in the 6 weeks to harvest. Other factors include too early harvesting, refrigeration at <4 deg C, high N-content, high humidity during storage, and the presence of ethylene (>1 ml/litre). Prophylactic measures include post-harvest treatment with antioxidants, and storage in an atmosphere with 0.8-1.2% O2 and <1% CO2. The causes of low temperature breakdown include late harvesting, and Ca and P deficiencies. Preventive measures include refrigeration initially at 5 deg C, followed by monthly reductions of 1 deg C, and maintaining CO2 levels below 1%.
