An overview of the research into postharvest aspects of macadamia production in South Africa, conducted during 1996-99, is presented. Of particular interest have been the physical characteristics of unprocessed kernels and the effect of processing on kernel quality. Results have shown that oil content does not vary much from year to year but does vary within a cultivar grown in different regions. The unsaturated:saturated fatty acid ratio is cultivar specific and is also higher in trees grown in the cooler regions. Kernel size is cultivar specific but declines in older trees. Requirement for removal of preharvest blemishes after shelling (reworking) was around 30% in one processing plant and it was found that reworked kernels became rancid more rapidly than intact kernels. Studies on wet and dry processing found that time of season was the most important factor influencing quality followed by kernel type, processing method and cultivar. vars is discussed.
