Comparison of quality evolution during storage between different cultivars of plums.

Plums (cultivars Bleue de Belgique, Belle de Louvain, Reine Claude d'Althan and Monsieur Hatif) and cherries (cultivars Castors, Lapins, Somerset and Sylvia) harvested on several dates before the commercial harvesting date and on the commercial harvesting date were stored at 5 deg C and 90-98% RH. Fruits harvested on the commercial harvesting date were classified as unripe (partially coloured) and ripe (fully coloured); half of each group were stored as above and the other half were stored at 18 deg C and 70% RH. Low temperature storage delayed the development of internal breakdown, pectin metabolism and loss of firmness. Early harvesting of immature plums resulted in irregular ripening in storage. Of the plum cultivars, Reine Claude d'Althan had the longest storage life with a slow rate of firmness loss, whereas Belle de Louvain lost firmness rapidly and had poor flavour at the end of storage.
