The postharvest quality of fresh oranges was evaluated in terms of chemical and physical properties, in May 1998. Fruits were stored in ambient conditions (21 plus or minus 0.43 deg C and RH 60 plus or minus 1%) or in a cold room (1 plus or minus 0.5 deg C and RH 85 plus or minus 2.5%). After 15 days of storage a significant difference was observed between treatments in the concentration of ascorbic acid (decrease of 20 and 8% in fruits stored at 21 and 1 deg C, respectively).
