Clary sage (Salvia sclarea) has traditionally been used in the food, cosmetic and medicinal industries. It is a xerophyte, native to the Mediterranean region, but is now cultivated in Europe and USA for its volatile oil compounds. Maximum oil yield is obtained during full flowering, when the inflorescence is harvested along with the top pair of leaves. Flowers and leaves are covered with oil glands, but have different oil compositions. High levels of linalool and linalyl are required for good quality oil.The country of production, type of harvesting methods and postharvest technology also influence oil quality. Traditional and modern uses as well as the chemical composition of the oil from various origins are described.
